My version of Yellow Cab's Charlie Chan pasta |
It’s time to bring out your inner Master Chef now that inflation has made it increasingly more impractical to always order food or eat at restaurants. With some skills in the kitchen, you can hack the hell out of those well-loved restaurant dishes. Today, we’re going to try to recreate the CHARLIE CHAN CHICKEN PASTA from Yellow Cab.
500g spaghetti noodles
300g boneless, skinless chicken thighs (or breast), cubed
2-3 cloves garlic, minced
1 small onion, finely chopped
1 tablespoon Lee Kum Kee Chili Garlic Sauce
2 tbsp. Lee Kum Kee Char Siu Sauce (or 1 tbsp hoisin sauce, 1 tbsp. soy sauce and 1 tbsp. honey)
1 tbsp sesame oil
1/2 cup oyster sauce
1/2 cup roasted skinless peanuts
chopped green onions for garnish
Procedure:
- Soften onions and garlic in a wide pan big enough to accomodate all the ingredients. Meanwhile, start boiling water for your pasta. Cook until the noodles are still slightly undercooked.
- Saute the chicken cubes with your aromatics until they start to brown.
Brown the chicken pieces - Combine all the sauces and add half a cup of the pasta water. Pour everything in with the chicken. Simmer for 5-10 mins until the chicken is fully cooked. Add the peanuts.
Combine all the sauce ingredients and coat the chicken - Toss the noodles into the sauce and finish cooking the noodles in the pan. once the sauce coats all the noodles and are sufficiently thick, turn off the heat and serve asap. Garnish with chopped green onions. Enjoy!
Viola! The finished product:
