Meat-Free Moussaka Melt Recipe Using VEEGA MEAT-FREE GINILING

Vegetarian moussaka melt using Veega Meat-free giniling

We all love a good moussaka melt from our favorite Persian restaurant. However, it’s such a decadent dish. If you’re watching what you’re eating, you can go for a quick and easy meat-free option that you can make at home. I used a vegetarian meat-free substitute here. It’s not vegan because there’s eggs and cheese, but you can easily tweak it to make everything vegan friendly if you wish.

Here’s my recipe for a meat-free moussaka melt using Veega Meat-Free giniling (ground meat substitute)

Ingredients
2 small eggplants 1 med onion 4 cloves garlic 1 pack Veega meat free giniling 1 cup crushed tomatoes 1/2 tsp. Cumin 1/2 tsp. Turmeric 1/2 tsp. Garlic powder 1/2 tsp. Paprika salt & pepper to taste For the cheese sauce: 1 tbsp flour 2 tbsp. Salted butter 1 cup milk 1 cup grated quick melt cheese Extra cheese for topping (cheddar/mozzarella mix) salt & pepper to taste
Procedure:
  1. Slice the eggplants and fry on both sides in olive oil until soft. season with a little bit of salt and pepper to taste. Set Aside.
  2. Soften the garlic and onions before adding the Veega meat-free giniling or ground meat. Heat everything through.
  3. Add all your spices and crushed tomatoes. If using real meat, add a cup of water or stock and simmer until the mixture is almost dry. Add salt and pepper according to taste. Note that Veega is already seasoned so taste before adding any salt. If using real meat you will need to either use salted stock or add salt and pepper to the mixture.
  4. Once  the mixture is done, layer on the bottom of a baking pan or individual ramekins. Top with a layer of your fried eggplant.
  5. Cheese sauce: Make a roux by whisking the salted butter and flour in a sauce pan. Once the flour is cooked through, add a cup of milk. This will make your roux thicken up. Add water if it gets too thick. melt your cheese in the sauce and add a pinch of salt and garlic powder for more flavor.
  6. Whisk the sauce until smooth and pour over your meat and eggplant mixture.
  7. Top with more grated cheese and bake until the top is bubbly and golden!
