15-minute Truffle Cream Pasta Recipe a la MAMOU
Don’t you just love anything with truffles? Luckily, truffle cream pasta just like the famous one served at Mamou is not so hard to make! If you want to impress your family or your significant other on your next date night, try this recipe out! There are very few ingredients and it takes only 15 minutes to make!
Ingredients:
500g spaghetti of your choice
500ml all purpose or cooking cream
1 head garlic, minced
1 chicken broth cube
2 cups sauteed assorted mushrooms or crispy bacon (optional)
2 tbsp. extra virgin olive oil
truffle oil (quantity depends on the brand you are using)
Procedure:
- Start boiling your water to cook your pasta before you start with your sauce. Cook the noodles until just al dente in salted water. The pasta should be ready to toss in the sauce as soon as it’s done if you put it in the pot right before you start making the sauce (8-10 mins).
- Soften the minced garlic in EVOO just until they are soft and aromatic but not brown.
- Add the cream as soon as the garlic is soft and bring to a slow simmer. Melt the chicken cube in the sauce and add some salt if you feel it needs more flavor.
- Toss your cooked pasta into the sauce. Turn off the heat to make sure your cream does not curdle.
- Drizzle truffle oil while you toss your pasta in the sauce. Be careful when using a high quality truffle oil. Very little goes a long way. If you add too much, it can be a disaster. Add a little at a time and taste.
- Finally, top with either sauteed mushrooms or crispy bacon.
Enjoy this pasta with your favorite steak and charcuterie board for a special dinner. You can also enjoy this as a simple but luxurious weekday meal!
