Easy Quarantine Recipe: Thai Stir-Fried Pork with Holy Basil (Pad Khrapao)
Since we are all stuck at home, I am trying to find more ways to create variety in our daily menu without having to look for hard to find ingredients. My latest experiment is a simple Thai stir-fried pork with holy basil or Pad Khrapao.

Ingredients:
500g lean ground pork
1 red onion, thinly sliced
1 head garlic, minced
1 capsicum or any chili (and any quantity) you like, chopped.
1 packed cup Thai basil or Italian basil if you can’t find the Asian one.

Sauce:
1 tbsp. Thai fish sauce
3 tbsp. soy sauce
3 tbsp. oyster sauce
1 tbsp. brown sugar

Procedure:
- In a wok, heat up some oil and soften the onions, chili and garlic.
- Turn up the heat and stir-fry the pork until fully cooked and brown on the edges.
- Add the sauces, sugar and half a cup of water.
- Once the water evaporates, add the basil and fold it in until the leaves wilt.
- Serve immediately with plain white rice and a spicy papaya or green mango salad!
